The Clay Pots that Elevate My Cooking!

Today I'm so excited to share one of my kitchen essentials with you! If you ever watch my Friday night cooking events on Instagram Stories, I'm sure you'll recognize the clay pots I use.

Clay pots are fantastic to cook with and once you start, you'll easily start to love them too!

My promise to you, my community, has always been to make access to spices and equipment easy and affordable, which is why I’m excited to announce I'm launching a small collection of clay pots today!

The porous properties of this ancient cookware makes them perfect for slow simmering. They work great on your stove or in your oven, but it’s over-the-fire cooking on the BBQ where they really shine. You'll get a lot of the flavour from the charcoal or wood you're using; it will seep into the food and sauce you're making. This is why they are my go to when cooking Butter Chicken or Malaysian Curry dishes. The pots give these meals an added layer of flavour you can't get with cast iron or stainless steel.

Also, as you may have seen on Friday night, they are fantastic for making my Korean BBQ Chicken Thighs with Crispy Coconut Rice. The way the lid and the clay pot are constructed makes it really easy to drizzle that piping hot beef tallow around the lid, letting it flow down the sides and under the rice, giving your rice that nice crackling, crispy layer which pairs so well with South Asian cooking.
