Kasoori Methi is derived from dried fenugreek leaves. A special drying process is used to preserve the green colour while being dried. This spice is the secret ingredient in many Indian dishes, but it's also used in Middle Eastern and North African cuisines. It's famously used in butter chicken but can be used in many other meat or vegetarian based dishes, such as curries, stews, and salads.
